Dinner preparation

Wes was not sure why Katja had felt it necessary to invite him to dinner. He guessed it was pure guilt, but he was not about to pass up a home cooked meal. University fare and the quick bites he had in the field were rapidly losing their appeal.
Even if this was purely an act of contrition on Katja's part, he wanted to make sure he presented himself properly so he decided it would be wise to investigate typical Swedish culinary and mealtime customs. Katja had mentioned something about Swedish meatballs as well as Indian cuisine which seemed quite the contradiction in terms, but hey he fought zombies for a living so who was he to say what was odd or not.
Not sure where to start, he decided to google 'regular ordinary Swedish meal time' to get a feel for the typical customs and rituals surrounding dinner time. What he found horrified him:
