What's on your plate, 2022!

New FOOD thread for 2022! Share your recipes / photos of your food!

I made a really yummy curry / casserole today - so sharing the recipe with you all.

I cut down the liquid content from the recipe and swapped it for
1 can passata
1 can coconut milk
then refilled the can with water and added that too.

The sauce was really good - and happily I made fresh naan bread to soak it up.
Served also with mango chutney and raita

Really carbohydrate heavy - but delicious :D
Oh and we got left overs hurrah!

I don't often cook from fresh these days, but I really like this chicken goulash recipe [could easily be adapted to other meats or quorn]. You can't go wrong with the smoked paprika / caraway combo, and it's really simple to do.

We generally have vegetarian main meals 3 days out of 7...just from preference, but it's not easy to get the carb / protein / fat balance in quick and convenient forms.

I just put this in the oven: https://www.bbcgoodfood.com/recipes/sausage-mash-pie

Swapped meat sausages for vegetarian sausages, and added in some mushrooms
Used Vegetable Boullion instead of Beef Stock, and reduced quantity because I wanted to add a can of chopped tomatoes too
Also used Sweet Potatoes because that is what we had :)

Serving with some veggies

I have just eaten a huge bowl of stollen cake covered in custard and I feel 1. sick 2. high as a kite on sugar.

I had no choice, you see, because the cake was left over from Christmas and only had another two months on its best by date.
