I've done a few Elites more than once and I haven't memorized all of them.

And then I started doing the first 3 Nightmare dungeons and realized a lot is different and that I have no idea what I am doing most of the time

I strongly recommend that you read the guides for those dungeons on tswdb, they are very well written, comprehensible and they explain everything that you need to know as well as mentioning which abilities you are likely to need.
