Hey. Its Cors birthday. figured she would not be on ever to see this but hey I'm wrong no worries spaghettabout it.
Anyway, my gift to you, another jamaican ricipe, PUMPKIN RICE!!!

2 cups long-grain rice
2 tbsp. annatto-infused oil (or subsitute with olive oil and a dash of white pepper and nutmeg)
3 cloves garlic, minced
1 small yellow onion, sliced
1 green bell pepper, diced
1 lb. pumpkin meat, cut into 1/2 inch cubes
3 sprigs cilantro, slivered
A dash of salt

First, wash the rice. I've never told anyone to do this before but hey, why not. Or don't even.

Next, heat oil in a medium sized over medium heat on stove. Add garlic (and white pepper and nutmeg, if you are subtituting like a mrs mime) and brown for 30 seconds. Add onions and cook until caramalized, stirring frequently, for about 5 minutes, then add the bell pepper and stir over heat for another 2–3 minutes. Add rice, stirring constantly, and brown it for another minute.

Then add the pumpkin and cilantro, stir in 3 cups of water, and flick in the salt. Increase heat and bring to a boil at medium-high heat and boil uncovered until liquid is reduced and barely covers barely covers rice. Reduce heat to low, cover, and cook until rice is tender about 14 minutes.

Bam. Done like dinner. Or bruch. Whenever. Also, I totally have never made this before so i think you might wanna add a bit more water to the rice than recommended here.
